My wife is constantly on the move at work and likes a snack or an energy boost during the day. She also loves pumpkin, so what better way to give her both in a single bite? I use a pre-combined pumpkin spice (read-bought it at the store), but you can use the traditional cinnamon, nutmeg, ginger, allspice, mace, and cloves individually if you like.
I make different types of energy balls, and they are all very quick and easy and don’t require baking. These are paleo, gluten-free, sugar-free and could also be vegan if you swap the honey for maple syrup or agave. I try to make them into 1″ balls, but you can make them however you like since they don’t require baking.
Paleo Pumpkin Spice Energy Balls

Ingredients
- 1 cup Gluten-free rolled oats
- ¼ cup Vegan vanilla protein powder
- 1½ tbsp Pumpkin pie spice
- ½ cup Almond butter
- 3 tbsp Raw, organic honey
- ⅓ cup Pure pumpkin puree
- 2 oz Organic dark chocolate chips, or chopped into small bits
- 1 pinch Salt
Instructions
- In a stand mixer bowl, combine all the dry ingredients and mix briefly.
- Add the wet ingredients and chocolate, and mix for 1-2 minutes or until well-combined.
- Roll the balls into 1" spheres and chill for up to a week in an airtight container.
