My wife is constantly on the move at work and likes a snack or an energy boost during the day. She also loves pumpkin, so what better way to give her both in a single bite? I use a pre-combined pumpkin spice (read-bought it at the store), but you can use the traditional cinnamon, nutmeg, ginger, allspice, mace, and cloves individually if you like.

I make different types of energy balls, and they are all very quick and easy and don’t require baking. These are paleo, gluten-free, sugar-free and could also be vegan if you swap the honey for maple syrup or agave. I try to make them into 1″ balls, but you can make them however you like since they don’t require baking.

Paleo Pumpkin Spice Energy Balls

Oats, protein powder, pumpkin puree, almond butter, chocolate, honey, and warm spices make up these no-bake snack balls.

  • In a stand mixer bowl, combine all the dry ingredients and mix briefly.
  • Add the wet ingredients and chocolate, and mix for 1-2 minutes or until well-combined.
  • Roll the balls into 1" spheres and chill for up to a week in an airtight container.
